A pomodoro sauce is a very simple tomato sauce flavored with garlic, and not much else. The tomatoes are blended with the juice before cooking. Use for seafood pasta dishes.
Pomodoro Sauce
Ingredients
- 1 28- oz can tomatoes blended with juice in a blender
- About 1/2 cup extra virgin olive oil
- 3 to 4 garlic cloves chopped
- Pinch of sugar
- Salt to taste

In a saucepan, heat the olive oil over medium heat. Add in the garlic and cook until fragrant, about 2 minutes. Do not let the garlic brown or the sauce may be bitter.

Add in the tomatoes, pinch of sugar, and salt to taste. Increase heat and let the mixture come to a boil stirring frequently. Reduce heat and simmer sauce for about 15 minutes, stirring frequently. Sauce with thicken slightly during cooking.
