Oysters Bienville
Ingredients
- 1 bunch of green onions green and white parts sliced
- 2 tablespoons butter
- 2 tablespoons flour
- 2/3 cup chicken stock
- 1 egg yolk
- 1/3 cup sliced mushrooms
- 1/3 cup white wine
- 1 teaspoon salt or to taste
- Cayenne pepper
- 2 dozen oysters
- 1/2 cup fresh bread crumbs
- 1 tablespoon Parmesan cheese
Instructions

Cook green onions in butter over low heat until softened and tender. Add in flour and cook until brown, a few minutes.

Stir in the chicken broth and mushrooms. Beat the egg yolk with the wine, and pour it slowly into the pan while whisking quickly. Season with salt and cayenne pepper.

Cook for about 10 minutes over low heat, stirring constantly.

Shuck oysters and place one on each half shell, placed in a pan with a layer of salt to hold them upright. Place the oysters in a preheated 400 degree F hot oven. Remove the oysters from the oven, and pour some sauce over each oyster, then sprinkle each with a little bread crumbs and Parmesan.

Return the oysters to the oven and bake for 15 minutes or until oysters are lightly brown and are cooked through.
