Louisiana Chartres Street Trout
Ingredients
  • 6 trout filleted
  • Salt and pepper to taste
  • 1/2 cup butter about
  • Juice of one lemon
  • 1/4 cup capers
  • 1/4 cup freshly chopped parsley
  • Buttered toast
Instructions
  1. Preheat oven to 350 degrees F.
  2. Cover a baking sheet with aluminum foil. Butter it well. Arrange the fillets over the top and sprinkle with salt and pepper. Dot liberally with butter and cover with another sheet of foil. Bake 8-10 minutes or just until the fish flakes easily.
  3. Transfer fish to a serving plates and sprinkle with a little lemon juice, capers, and parsley. Serve with buttered toast.
