White Fish Stock
Ingredients
  • 3 pounds fish bones and heads of lean fish
  • 1 carrots sliced
  • 1 onion sliced
  • 1 large handful parsley
  • 3 bay leaves
  • 3 cloves
  • 6 black peppercorns
  • 2 garlic cloves halved
  • 1 cup sliced mushrooms
  • 1 gallon cold water
  • 1 cup white wine
Instructions
  1. Place the fish heads and bones in a large stock pot. Add in the spices and vegetables. Pour in the water and white wine.
  2. Bring up to a very low simmer, and simmer for 45 minutes.
  3. Strain through a fine mesh strainer or cheesecloth.
  4. Cool properly, and use in recipes.
