White Fish Stock
Ingredients
- 3 pounds fish bones and heads of lean fish
- 1 carrots sliced
- 1 onion sliced
- 1 large handful parsley
- 3 bay leaves
- 3 cloves
- 6 black peppercorns
- 2 garlic cloves halved
- 1 cup sliced mushrooms
- 1 gallon cold water
- 1 cup white wine
Instructions

Place the fish heads and bones in a large stock pot. Add in the spices and vegetables. Pour in the water and white wine.

Bring up to a very low simmer, and simmer for 45 minutes.

Strain through a fine mesh strainer or cheesecloth.

Cool properly, and use in recipes.
