This recipe for crab cakes uses a pound of crabmeat and leftover mashed potatoes. Form in patties and fry until golden.
Crab and Mashed Potato Cakes
Ingredients
- 1 lb. crabmeat picked to remove all shell
- 1 cup leftover mashed potatoes
- 1 egg beaten
- 1/2 teaspoon salt
- Black pepper dash
- Onion salt dash
- Oil for frying
Instructions

Combine all ingredients in a mixing bowl, seasoning with black pepper and onion salt to taste.

Shape into 12 crab cakes.

Add a few tablespoons of cooking oil in a non-stick frying pan over medium heat. Fry the crab cakes until browned on both sides. Serve.
