This recipe for crab cakes uses a pound of crabmeat and leftover mashed potatoes. Form in patties and fry until golden.

Crab and Mashed Potato Cakes
Ingredients
  • 1 lb. crabmeat picked to remove all shell
  • 1 cup leftover mashed potatoes
  • 1 egg beaten
  • 1/2 teaspoon salt
  • Black pepper dash
  • Onion salt dash
  • Oil for frying
Instructions
  1. Combine all ingredients in a mixing bowl, seasoning with black pepper and onion salt to taste.
  2. Shape into 12 crab cakes.
  3. Add a few tablespoons of cooking oil in a non-stick frying pan over medium heat. Fry the crab cakes until browned on both sides. Serve.
