A great sauce for grilled or pan seared scallops, grilled shrimp, or lean fish fillets. This white wine butter sauce contains lemon and grapefruit.
California Citrus Butter Sauce
Ingredients
- 3 sticks whole butter cut into pats
- 1/4 cup white wine
- 2 tablespoons fresh squeezed grapefruit juice
- 2 tablespoons fresh squeezed lemon juice
- 2 tablespoons white vinegar
- 2 shallots minced
- 1/4 cup cream
- 1/2 cup grapefruit segments cut into thirds
Instructions

In a heavy saucepan, heat wine, juices, vinegar, and shallots over medium heat and simmer until the liquid has been reduced by half.

Add in the cream, and bring to a boil for 2 minutes.

Whisk in the butter quickly, adding several pats of butter at a time and adding more when the previous amount has been incorporated.

Toss in the grapefruit and serve immediately.
