A great sauce for grilled or pan seared scallops, grilled shrimp, or lean fish fillets. This white wine butter sauce contains lemon and grapefruit.

California Citrus Butter Sauce
Ingredients
  • 3 sticks whole butter cut into pats
  • 1/4 cup white wine
  • 2 tablespoons fresh squeezed grapefruit juice
  • 2 tablespoons fresh squeezed lemon juice
  • 2 tablespoons white vinegar
  • 2 shallots minced
  • 1/4 cup cream
  • 1/2 cup grapefruit segments cut into thirds
Instructions
  1. In a heavy saucepan, heat wine, juices, vinegar, and shallots over medium heat and simmer until the liquid has been reduced by half.
  2. Add in the cream, and bring to a boil for 2 minutes.
  3. Whisk in the butter quickly, adding several pats of butter at a time and adding more when the previous amount has been incorporated.
  4. Toss in the grapefruit and serve immediately.
