Cajun Shrimp Jambalaya
Ingredients
- 1 tablespoon butter
- 1 tablespoon butter
- 1/4 cup ham cubed
- 1/4 cup diced green pepper
- 1 bay leaf
- 1 sprig fresh thyme
- 1 sprig fresh parsley chopped
- 1 onion sliced
- 2 garlic cloves crushed
- Salt and pepper to taste
- 1 pound shrimp peeled
- 2 cups chopped tomatoes
- 1 1/4 cups tomato juice
- 1 cup uncooked long grain rice
Instructions

Melt butter in a large sauce pan over medium heat. Add in the flour, ham, and green pepper. Cook for 5 minutes, stirring constantly. Add in the remaining ingredients except the rice. Bring the mixture to a boil. Sprinkle in the rice. Cover, and simmer slowly for 40 minutes, until the rice is done and liquid is absorbed.
