Anchovies are a rich, oily fish that are easily cooked up fresh. Here’s a basic recipe for broiled anchovies.
- Fresh anchovies cleaned
- Butter
- Salt and pepper
- Chopped parsley
- Lemon wedges

Clean the anchovies and pat dry gently. Season with salt and pepper and brush with melted butter inside and out.

Place on broiler pan or rack skin side down and adjust rack to the top level. Sear the anchovies, then lower the rack to finish cooking. To check the doneness, the anchovies will pull easily from the bones.

After they have turned golden brown and are completely cooked, remove to a platter or serving plate, drizzle with additional melted butter, a few squeezes of lemon juice, and chopped fresh parsley.
