Baked Minnesota Pike
Ingredients
- 1 4- lb. Northern pike
- 6 tablespoons butter
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped celery
- 3 tablespoons finely chopped green pepper
- 2 tablespoons finely chopped parsley
- 2 cups soft bread crumbs
- 3 eggs lightly beaten
- 1/2 cup finely chopped cooked shrimp
- Salt and pepper to taste
Instructions

Preheat oven to 350 degrees F.

Clean the fish, but leave it whole.

Melt 4 tablespoons of the butter in a saucepan and add in the onion, celery, and green pepper. Cook until vegetables have softened. Combine with the parsley, bread crumbs, eggs, and shrimp. Mix well, and sprinkle with salt and pepper.

Sprinkle the inside of the fish with salt and pepper, and stuff with the bread crumb mixture. Sew up or tie well. Place the fish on a greased baking sheet. Dot the fish with the remaining butter, and sprinkle with salt and pepper.

Bake about 40 minutes, or until the fish flakes easily and the stuffing is set.
