Oysters Rockefeller
- 48 live oysters, shucked
- 4 slices bacon, chopped
- 1 package frozen spinach, thawed
- 3 tablespoons chopped parsley
- 3 celery ribs, sliced
- 2 green onions, white and green parts, chopped
- 1/4 teaspoon paprika
- 1/4 teaspoon pepper
- 1/4 cup dry plain bread crumbs
- 4 tablespoons unsalted butter, melted
- Salt and pepper to taste
- Kosher salt or rock salt, for baking the oysters
Arrange the oysters on rock salt or kosher salt, so they stay upright, and bake in a 400 degree oven just until done. Remove, and preheat oven to broiler setting.
Finely chop the bacon, spinach, parsley, celery, and green onions in a food processor. Place this, plus the paprika, pepper, bread crumbs, and butter in a small saucepan, and heat until very hot. Spoon some over each of the oysters, and broil until lightly browned.
